Tamano Hikari Shuzo, founded in 1673, is a brewery with over 350 years of history that started in Wakayama and is now based in Fushimi, Kyoto.
Even during the post-war mass production era, they pursued "authentic sake made with only rice, water, and koji," and are known as pioneers who revived "Junmai sake" in 1964 ahead of the industry.
Currently, as a "Junmai Ginjo brewery" that adds no brewing alcohol at all, they brew only Junmai Ginjo and Junmai Daiginjo.
While respecting tradition, they are never afraid of innovation, continuing uncompromising sake brewing to maximize the original umami of rice.
