Imada Sake Brewery, founded in 1868, is an innovative brewery known for its Toji (master brewer), Miho Imada, who was selected as one of the BBC's "100 Women of the Year."
Its greatest feature is that it has revived "Hattanso," a phantom sake rice that had once disappeared, and is the only brewery in the world to use this rice for brewing. Inheriting the tradition of Akitsu, the birthplace of Ginjo sake, they brew sake with a gentle and delicate taste using Hiroshima rice and soft water.
Located right in front of the Seto Inland Sea, they pursue sake brewing that prioritizes compatibility with fresh seafood, continuing to evolve while fusing tradition with the latest technology.
