Koyama Shuzoten is a historical brewery in Dotehama, Ogata-ku, Joetsu City, Niigata, founded during the Tenpo era of the late Edo period. Currently, the ninth-generation owner values 'careful brewing without cutting corners' as the family motto and continues to carefully protect traditional handmade methods.
For the brewing water, they use pure underground water springing from the base of the sacred Mt. Yoneyama. Carefully brewing Niigata-grown sake rice such as Gohyakumangoku and Koshi Tanrei, they pursue a 'Tanrei Umakuchi' color that harmonizes the crispness typical of Niigata sake with the sweetness of rice.
Despite its small production scale, it puts its heart into every bottle, delivering stable quality sake that one never tires of. Representative brands such as 'Katanoi' and 'Echigo Jiman' stay close to the food culture of Ogata-ku, rich in seafood, and have warmly colored the social gatherings of local people.
