Shinozaki is a long-established brewery that has been manufacturing alcoholic beverages in Hiramatsu, Asakura City, Fukuoka Prefecture for over 220 years since its founding in the late Edo period. Located in the Asakura region, one of the leading granaries in Kyushu, and blessed with high-quality brewing water called underground water from the Aso mountain range, they produce a wide range of alcoholic beverages including sake, shochu, amazake, liqueurs, and even whisky.
They use underground water called famous water for brewing water and utilize this water in all manufacturing processes of alcoholic beverages. This water pumped from deep underground in the Aso mountain range is a soft water system with excellent mineral balance, and is the foundation of the brewery's sake quality as water quality suitable for sake brewing. Sake woven by raw rice nurtured in the rich nature of Asakura and this high-quality brewing water is characterized by a soft and smooth mouthfeel and an elegant taste.
The sake brand "Hiramatsu" is derived from the place name of the brewery's location and is developed mainly on Junmai sake. In shochu, long-term aged wheat shochu "Sennen no Nemuri" has won 16 gold medals at Monde Selection and gained international acclaim, and barrel-aged wheat shochu "Asakura" is made by a whisky-like manufacturing method using koji inspired by the research of Dr. Jokichi Takamine, featuring a unique flavor that has undergone barrel aging for more than 8 years.
Amazake "Kunigiku Amazake" is a popular product that manufactures about 2 million bottles a year, and as a non-alcoholic amazake saccharified only from rice koji and rice, it does not use any sugars or preservatives and is supported by health-conscious consumers as a "drinking IV drip". Since winning the Monde Selection Gold Medal in 2008, it has gained national recognition.
In 2021, they opened "Asakura Distillery", the first craft whisky distillery in Fukuoka Prefecture, and are working on whisky making as a new challenge while basing on traditional sake and shochu manufacturing technology. In the same year, they also opened "SHINDO LAB STAND" in Asakura City, playing a role as a base for disseminating local fermentation culture. Shinozaki's major characteristic is its attitude of constantly continuing innovation while protecting tradition for over 220 years.
