Yamashiroya Sake Brewing is a brewery with a history of 400 years, started by Yamashiro Abe, a retainer of the Mori clan, in Keicho 16 (1611) in present-day Yamaguchi City. In Showa 50 (1975), they suspended their own brewing due to the deterioration of the brewing water quality, but in Heisei 26 (2014), the then president Kenichi Miyazaki revived sake brewing with the cooperation of a brewery in Shunan City, Yamaguchi Prefecture.
For rice, they use Yamada Nishiki cultivated without chemical fertilizers by contract farmers in Ato Tokusa, Yamaguchi City, and for water, they use the underground water of Yamaguchi Daijingu at the foot of 'Yanagi no Mizu' (Water of Yanagi), one of the three famous waters in Yamaguchi City. It is a long-established brewery that thoroughly implements 'Made in Yamaguchi' and continues sake brewing sticking to local rice and water.
