Tochikura Shuzo, established in 1904 (Meiji 37) in the Otsumi district of Nagaoka, Niigata, is a brewery dedicated to crafting high-quality local sake. It utilizes pure spring water fetched from a horizontal well in the Nishiyama Hills behind the brewery and prioritizes locally grown rice. Rooted in Nagaoka's famous 'Kome Hyappyo' (A Hundred Sacks of Rice) spirit—a philosophy of investing in the future—the brewery has focused on long-term quality improvement. In 2016, it transitioned to a 100% Junmai brewery, eliminating added brewers' alcohol to maximize the natural potential of rice. Inheriting the skills of the master brewer Rokuroji Goto, who was designated as a 'Master Craftsman' of Niigata, the brewery continues to pursue new flavors that build a bridge to the next generation.
