Shimizu Shuzoten, established in 1862 during the final years of the Edo period, is a historic brewery located in Kawai-machi, Wajima City. The brewery's most defining characteristic is its profound connection to the 'Shiroyone Senmaida' (White Rice Thousand Terraces), Wajima's world-famous scenic landmark. In a true practice of 'terroir,' the brewery owner-master brewer cultivates rice in the terraces themselves to use as the raw material for their craft.
As the founder was originally a master brewer, the brewery is renowned for its exceptional technical expertise despite its small scale, having earned numerous gold medals at both regional and national competitions. Their flagship brand, 'Notohomare,' is characterized by a clean profile and vital rice umami that harmonizes perfectly with Noto's seafood. Although the 2024 Noto Peninsula Earthquake caused severe damage to the facility, the owner-brewer remains passionately committed to preserving both the beautiful landscape of Senmaida and the region's brewing culture, steadily advancing on the path to reconstruction.
