Izu Honten is a long-standing brewery with over 300 years of history, founded in the 2nd year of Kyoho, starting sake brewing during the time of the 8th Shogun Tokugawa Yoshimune.
The late Zenya Izu, the 11th head, succeeded in cultivating the phantom sake rice "Kameno-o," which had once become extinct due to pests, after 7 years of effort. Even now, they cultivate Kameno-o in Munakata City and use this as the main raw material for brewing.
Preserving the traditional "Funa-shibori" (vat pressing) method, they carefully press the moromi (mash) filled in sake bags by stacking them in wooden boxes and pressing with their own weight. Large-scale renovation work is underway, and the new facility is planned to include a brewing area, sake bar, direct sales shop, history exhibition, and sweets area.
