Uchigasaki Shuzo Store is the oldest sake brewery in Miyagi Prefecture, founded in the early Edo period in 1661 (Kanbun 1). Boasting a tradition of over 360 years, the brewery is located in Tomiya City, in the center of Miyagi Prefecture.
In a climate blessed with rich greenery and beautiful water, they are dedicated to "strictly sake brewing," upholding the philosophy of "handmade sake that does not compromise, without being conscious of mass production."
By insisting on locally produced rice and carefully crafting with super soft brewing water, they brew famous sake where you can fully enjoy the original sweetness and umami of the rice.
Known for winter brewing (kan-jikomi) utilizing the severe cold of winter, it is supported by the traditional handmade techniques of Nanbu Toji (master brewers). Each bottle of their small-production sake is brewed with care.
President Kei Uchigasaki says, "We aim for sake that matches what you eat everyday, rather than matching something special, and makes you feel relieved when you drink it," pursuing a taste that is gentle and somehow comforting.
While winning multiple gold medals at the Annual Japan Sake Awards with sake using "Kura no Hana" and "Gin no Iroha," they continue to challenge themselves to brew high-quality sake while protecting tradition.
The representative brand "Hoyo" is named after the Tang dynasty story "Hou Mei Chou You" (Phoenix singing towards the morning sun), implying a wish for the "prosperity of family fortune." It is a sake characterized by swelling umami and containing aroma spreading from a smooth mouthfeel.
