Fukumitsuya

Fukumitsuya, established in 1625, is the oldest and most historic brewery in Kanazawa. While once a traditional family-run business, they made a bold transition in 2001 to become a 'Junmai-only' brewery, meaning all their products are brewed exclusively with rice and water. This total conversion to Junmai production on such a large scale is a rare and pioneering achievement in Japan.
They use 'Hyakunen-sui' (Century Water), which is rainwater and snowmelt from the sacred Mount Hakusan that has spent 100 years filtering through the earth to become pure underground water. Using strictly selected 'Yamada Nishiki' and 'Gohyakumangoku' rice from contract farmers, they craft sake that merges Kanazawa's rich spiritual culture with advanced craftsmanship. Their flagship brands like 'Kagatobi,' 'Fukumasamune,' and 'Kuroobi' are known for sophisticated flavors that honor tradition while enhancing modern dining. Fukumitsuya also innovates beyond sake, expanding into beauty and health fields using fermentation technology, making it a leading Kanazawa enterprise that constantly evolves.
