Benefiting from the majestic subsoil water of the Kiso River and the cold "Ibuki-oroshi" winds that blow in winter, they brew locally-rooted sake.
Their most distinctive feature is the world's first attempt to create sake using a unique "Wisteria Flower Yeast" collected from the wisteria blooming in the precincts of Mandaraji Temple, an ancient temple in the local Konan City.
