Ayu Masamune Shuzo, established in 1875 (Meiji 8), is a charming brewery located in the mountains of Saruhashi, Myoko City, Niigata. Its shop building, a thatched-roof structure over 150 years old, is a symbol of this heavy snowfall region, welcoming visitors with a warmth that feels like stepping back in time.
The most distinctive feature is the abundant spring water that wells up from beneath the brewery at a rate of 6 tons per hour. Using this pure 'water of life' generously, the sake is brewed with traditional techniques protected by generations of brewers. It is characterized by a gentle 'Amakuchi' (sweet) profile that stands out among Niigata sakes, along with a silk-like smooth finish.
Named by Prince Wakamiya Yukichi of Kyoto Fushimi, who was moved by the sight of ayu (sweetfish) swimming in the clear stream during his visit, the brewery aims for a pure and somewhat nostalgic flavor worthy of its storied name.
