Yaegaki Sake Brewery is a sake brewing company in Himeji City, Hyogo Prefecture, boasting a history of over 350 years since its founding in 1666 (Kanbun 6).
The founder, Sakae Hasegawa, started a liquor store in Hayashida, Harima Province, and started brewing in 1690 (Genroku 3).
In 1881 (Meiji 14), the name was changed to "Yaegaki" taken from an old poem, and later changed to "Yaegaki".
The three pillars of the "Yamada Nishiki", the king of sake rice grown in the home, the famous water "Senju no Mizu" of the Hayashida River, and the skills and pride of the brewers who master "Kanjikomi" produce the mellow umami of Yaegaki.
The representative brand, "Mu of Kuro", etc., uses the traditional "Futa Koji Method".
