Tenryouhaishuzou

Tenryohai Shuzo is a brewery located in the Kanai district in the central part of Sado Island. Its name bears the history of Sado, which was once a territory directly controlled by the shogunate (Tenryo). Since Senichi Kato became the youngest brewery owner in Japan in 2018, while based on traditional sake brewing, he has carried out major reforms based on the latest brewing theories and data, rapidly increasing its evaluation.
Aiming for 'clean, light, and delicious sake,' they pursue the introduction of the latest equipment to increase the purity of brewing water and meticulous control of sake rice polishing ratio and fermentation temperature. Rather than sticking to tradition, they continue to redefine the ideal form of sake that best fits today's dining table.
