Abu no Tsuru Shuzo is a brewery located in Nago, Abu Town, Yamaguchi Prefecture, situated just 100 meters from Nago Port facing the Sea of Japan. After a long period of dormancy, it was revived by the 6th generation owner, Ryutaro Miyoshi. After studying architecture and working as a designer in Tokyo, he trained at various breweries before returning home to restore his family's brewery.
Using well water from the brewery and 100% Yamaguchi-grown rice, 90% of the rice used is Yamada Nishiki cultivated in local terraced rice fields overlooking the sea, which the brewery purchases entirely. To ensure high quality, all processes from brewing to bottling are managed in refrigerated rooms, practicing careful brewing that minimizes damage to the sake quality.
Pursuing a taste that feels a solid core within a clean and pure sake quality, they brew with a strong reflection of the local Abu terroir. It is a high-spirited brewery that reconciles support for regional agriculture with the expression of the local climate.
