Minami Shuzojo is located in Yasuda-cho, Aki-gun, Kochi Prefecture, and originally operated as a shipping wholesaler under the trade name "Yamagan."
Limiting production to about 300 koku (about 54 kiloliters), it adheres to small-quantity production emphasizing quality over quantity. A characteristic is that about 90% of its products are Junmai sake, and it adopts the traditional and labor-intensive "Hako Koji" (Box Koji) method for all Koji making.
While Kochi sake is generally said to be "Tanrei Karakuchi" (light and dry), Minami Shuzojo's sake is "Hojun Umakuchi" (rich and savory). It has a satisfying taste where you can firmly feel the umami of rice. It is known by the brand name "Minami" for outside the prefecture and "Tamanoi" within the prefecture.
