Kinoshita Shuzo, founded in 1842 (Tenpo 13) in Kumihama Town, Kyotango City, is a historical brewery worldwide known as the brewer of the brand "Tamagawa."
The founder named it "Tamagawa" (Jade River) because the clear stream "Kawakamidanigawa" flowing next to the brewery looked as beautiful as if it were paved with pebbles.
The biggest feature is that Philip Harper, the first foreign Toji (master brewer) in Japan from England, handles the sake brewing. After arriving in Japan after graduating from Oxford University and obtaining the Southern Toji qualification, Mr. Harper has been opening up new horizons of sake such as "Nature Brewing" without added yeast and development of aged sake that breaks common sense, fusioning traditional techniques and innovative sensibilities.
Sake brewed by Mr. Harper, who says "the change in taste along the time axis and temperature range is the charm of sake," has a powerful umami that can withstand aging and a solid strength. It shows amazing evolution from cold sake to hot sake, and with the passage of time.
