They resumed full-scale sake brewing for the first time in 50 years, and focusing on a female Toji, they stick to handmade brewing that is only possible in a small brewery.
They are also taking on the challenge of innovative sake brewing, such as reviving traditional Yamahai brewing in a modern way using plant-based lactic acid bacteria.
