Saijo City in Ehime Prefecture has long been famous as a town of famous water. Water flowing from the Ishizuchi Mountain Range, the highest in western Japan, has been crowned number one in Japan for two consecutive years at the National Delicious Water Competition. Clear brewing water welling up from wells inside breweries is ultra-soft, creating clear aroma, clean mouthfeel, and velvet-like softness. Ehime's representative sake rice 'Matsuyama Mii' was originally grown for eating, but its large grains and resistance to cracking suited brewing; it is now used as quasi-sake-suitable rice for light, dry sake. 'Shizuku Hime' is Ehime's first sake-suitable rice developed from Matsuyama Mii, offering a mellow quality and gorgeous aroma. Ehime is classified into three regions: Toyo, Chuyo, and Nanyo. Toyo sake is light and clean, Chuyo sake is light with umami, and Nanyo sake offers a solid, heavy taste. You can enjoy diverse sake unique to Ehime woven from Ishizuchi water and prefectural rice.
