Ibi
"Ibi" is the representative brand of Sugihara Shuzo, named with two meanings: "Ibi" (the place name) and "shooting (aiming for) beautiful sake." Named after "Ibi" in Ono-cho, Ibi District, Gifu Prefecture, where the brewery is located, it features unique brewing using the original sake rice "Ibi no Homare," subsoil water of the Ibi River, and brewery-inhabiting yeast. With extremely limited circulation and many die-hard fans, it often sells out on the release day and is known as a "phantom sake" that is currently the hardest to obtain.

Bojimaya
"Bojimaya" is the flagship brand developed by Tokoro Shuzo in 2000, characterized by brewing that emphasizes rice umami and acidity with the concept of "sake is for dining." About 90% of production is Junmai sake, more than half is Namazake, and all are shipped as Muroka Nama Genshu. Designed to withstand several years of aging due to high alcohol content and high acidity, it features a Muscat-like aroma and beautiful acid like white wine. With deep umami and richness original to rice, and a sake quality that prioritizes compatibility with meals, it is highly evaluated as a dining sake that enhances cuisine.
Ibi no Kura
"Ibi no Kura" is a local brand name originally used by Tokoro Shuzo, and is still manufactured and sold in parallel with "Bojimaya." With products such as Nigori and freshly pressed Namazake, it is loved as a brand rooted in the region.
Fukuwakamatsu
"Fukuwakamatsu" is the flagship brand of Ikedaya Shuzo, brewed by the traditional handmade natural brewing method continued from the Genroku era. The brewing technology and philosophy with a history of over 330 years are alive in it, gaining high evaluation as a National Annual Japan Sake Awards Gold Prize winner. It offers a wide lineup from Junmai Daiginjo to Honjozo, characterized by quality-first brewing through small-batch careful preparation.
Kameguchi
"Kameguchi" is a generic term for unfiltered sake directly from the tank, but here it refers to Ikedaya Shuzo's Usunigori (lightly cloudy) sake, a high-concentration Genshu (undiluted sake) with an alcohol content of 19-20%. Characterized by a sweet and mellow taste, it is loved as a unique brand where you can enjoy rich umami.
Usuzumi Zakura
"Usuzumi Zakura" is a brand named after the famous Usuzumi Zakura (a cherry blossom tree over 1500 years old) in Gifu Prefecture. It uses 100% Hatsushimo (a "phantom rice" that is a specialty of Gifu Prefecture and almost never grown outside the prefecture) for sake rice, which is contract-farmed in Miwa, Gifu City. Rich in rice umami, it features a sake quality suitable for savoring slowly during long autumn nights and is also suitable for warmed sake.
Daruma Masamune
"Daruma Masamune" is a brand famous nationwide as a pioneer of long-aged sake (Koshu). It is an aged sake glowing with amber color, characterized by a unique mellow aroma and deep taste. Boasting popularity enough to be said "Speaking of Koshu, it's Daruma Masamune," it is a one-and-only existence where you can enjoy complex and profound flavors resulting from long-term aging.
