Hakutou Shuzoten, established in the late Edo period and officially re-licensed at its current site in 1877, is a historic brewery located in Fugeshi-machi, Wajima City. Today, the owner-brewer couple works hand-in-hand to craft delicate and beautiful sakes. Aiming to create beverages that complement the rich culinary culture provided by the Noto sea, they remain steadfastly committed to uncompromising handcrafted methods.
Their flagship brand, 'Oku-Noto no Shiragiku' (White Chrysanthemum of Oku-Noto), is characterized by an elegant aroma reminiscent of a white chrysanthemum and a gentle, expansive flavor that highlights the softness of Wajima's water. Despite its small scale, the brewery's quality is undeniable, having earned numerous gold medals at the National New Sake Competition. Although the brewery was completely destroyed by the 2024 Noto Peninsula Earthquake, they are taking determined steps toward reconstruction with the profound wish to 'let the white chrysanthemums bloom again in Wajima.' This brewery is a source of Wajima's pride, producing drops that possess a dignified beauty and a warmth that embraces the drinker.
