Nakagawa Shuzo, founded in the late Edo period, boasts the oldest history in the eastern district of Tottori Prefecture.
A long-established brewery that sold sake under the shop name "Shodaya," it has continued sake brewing rooted in the region since establishing the trademark "Fukujukai." Working on the revival of Tottori's specific phantom sake rice "Goriki," they are pursuing "sake that can only be brewed in this land" as Inabatsuru.
The passion that revived the Goriki rice, whose production had once ceased, from a handful of seed rice is still alive in today's sake brewing. The severe winter of Tottori facing the Sea of Japan, high-quality water from the Sendai River system, and traditional skills of Izumo Toji fuse together, continuing to produce a taste with a core that maximizes the original umami of rice.
