Naka Town is located near the Naka River with high water quality and is an area blessed with high-quality water. It is a small family-run brewery with an annual production volume of 45 koku, which is extremely small-scale production.
With the philosophy of 'sake brewing with only rice and water,' all products are composed of a lineup of Junmai sake (Junmai Muroka Nama Genshu, Junmai Hiire Genshu, Junmai Hiire Kasui, Junmai Namazake). It is a brewery with a strong commitment to raw materials, such as using Omachi rice cultivated in the brewer's own rice field for part of the koji used.
Practicing sake brewing that is close to the rice, all rice is polished in-house, and the soaking time is decided by 'looking at the face of rice grains every year.' By refraining from activated carbon filtration as much as possible, the original color and taste of sake are cherished, and the sake featuring a pale golden color is characteristic.
Under the belief that 'the true deliciousness of sake is born by aging,' the shipping timing is carefully decided by repeating component analysis and sensory tests. Featuring a powerful and rich taste, it is said to demonstrate its true value when served as warm sake.
