Okuizumo Shuzo was born as a third-sector brewery after Okuizumo Town acquired a brewery that had continued since the Taisho era. It is located in Okuizumo Town, which is one of Shimane's leading rice-growing areas and is known as the production area of the premium Koshihikari rice "Nita-mai," referred to as "Uonuma of the East, Nita of the West."
They use 100% locally grown rice from Okuizumo Town and practice brewing with a commitment to pure rice (Junmai) sake. All the rice used is sake rice and Koshihikari harvested in local Okuizumo Town, and they manufacture and sell sake, doburoku (unrefined sake), shochu, etc., centered on the "Okuizumo Brand" for sake rice and the "Nita-mai Brand" for Nita-mai Koshihikari rice.
They polish the rice in-house and carefully brew the sake by the hands of a young Izumo Toji (master brewer). As a Junmai local sake born from the rice and water nurtured by the nature of Okuizumo, the hometown of myths, they aim for brewing that harmonizes with the local food culture.
