Asabiraki is a historic brewery founded in Morioka City, where spring water identical to "Daiji Shimizu," selected as one of the 100 Famous Waters of Heisei, flows within the premises, and this water has been used unchanged for brewing since its founding. The soft water with a delicate and soft mouthfeel directly becomes the taste of the sake.
Led by Nanbu Toji Master Masahiko Fujio, the brewing boasts high technical skills, such as being selected for the Ministry of Health, Labour and Welfare's "Contemporary Master Craftsman" award. Characteristics of Nanbu style brewing, such as Tsuki-haze koji making and long-term low-temperature fermentation, create a tanrei (crisp and light) taste.
They actively use nearly 10 types of sake rice grown locally in Iwate Prefecture, such as "Gin Ginga" and "Yu no Ka," valuing the "unique taste of Iwate's local sake." With a glorious track record of winning awards for 18 consecutive years at the National New Sake Appraisal, 15 of which were Gold Prizes, it has established a solid position as a brewery representing Iwate.
