Nakazawa Shuzo, established in 1744, is a historic brewery located in Matsuda Town on the Ashigara Plain in western Kanagawa. Guided by 11th-generation head Akira Kagiwada, the brewery honors tradition while garnering attention for innovative brewing sparked by a 'miraculous connection.' This is exemplified by the revival of 'Saccharomyces tokyo NAKAZAWA' (S.tokyo), a rare yeast discovered over 100 years ago by Dr. Ryoji Nakazawa that had remained dormant for decades. In a staggering coincidence, the doctor's name, the brewery owner's name, and the yeast's preservation stock number all aligned with the brewery's phone number (0024). Breaking away from modern low-temperature fermentation, Nakazawa Shuzo employs a temperature range closer to their founding era, resulting in sake with elegant sweetness, refreshing acidity, and a moderate alcohol content. This approachable style has earned prestigious international recognitions, including a Gold Award at the 'Wine Glass Sake Awards,' as the brewery continues to redefine the boundaries of Japanese sake for a global audience.
