Yamaoka Shuzo was founded around 1890, inheriting the Ibori Sake Brewery that has continued since the Edo period, and is now in its 4th generation. Located in Konu-cho, Miyoshi City, Hiroshima Prefecture, it brews sake in a cool climate at high altitude.
With the motto "Local sake is culture," they consistently manage everything from organically growing sake rice such as "Kame no O" and "Omachi" with contract farmers, and are also called "Japanese Sake Chateau (Domaine)." The brewing water uses spring water "Arita Shimizu," which is medium soft water, rare in Hiroshima where ultra-soft water is common.
It features a powerful yet gentle taste that maximizes the umami of rice, and is a talented brewery highly evaluated especially for warm sake.
