Kenbishi Shuzo is a brewery with a history of over 500 years, the oldest in Japan, located in Mikage, Higashinada Ward, Kobe City.
Since its establishment in the Muromachi period, under the family precept "Stay like a stopped clock," it has continued to preserve the unchanging taste of Kenbishi without being swayed by trends.
It maintains a unique brewing method that achieves the same taste through blending even while changing the rice polishing ratio, aging period, and rice variety every year, and provides all products as "ordinary sake" that does not fit into the classification of specific designation sake.
It maximizes the taste of rice through high-temperature long-term fermentation, and is characterized by a sake quality that is dry yet soft and easy to drink, with a yellowish hue and deep umami due to minimal filtration.
In the Edo period, it was known as one of the three great famous sake along with Otokoyama and Nanatsu-Ume, and even in modern times, it is evaluated as a unique existence in Nada.
