Ninki Shuzo is a capable brewery that, while inheriting the history of a brewery founded in 1897, gathers professional brewers to fuse "tradition and innovation" at a high level.
Upholding a thorough quality-first policy of "making only Ginjo sake" and "sticking to traditional tools and handcrafting," they are known as an "all-Ginjo brewery" that produces no ordinary sake at all. By intentionally practicing labor-intensive ancient methods—steaming in Japanese cauldrons, making koji with koji lids, and fermenting in some of Japan's largest wooden vats—they bring out deep, complex flavors unique to wooden Vat brewing.
Their flagship brand "Ninki-Ichi" has earned top-level international acclaim, having been selected for the Nobel Peace Prize award banquet. As a proud pioneer of Fukushima, they continue to evolve aiming to be the "number one favorite" (Ninki-Ichi) while broadcasting the terroir of Adachi to the world.
