Fumimoto Shuzo is a brewery founded in 1903, located in Shimanto Town (formerly Kubokawa Town), Kochi Prefecture, known as the Village of Fog. Once there were eight breweries in the town, but now only Fumimoto Shuzo protects that tradition.
The biggest feature is the traditional "Funeshibori" (wooden tub pressing) that takes time and effort. By using this method for all amounts, it creates a transparent taste with little off-flavor. In addition, it uses underground water of the Shimanto River as brewing water, and insists on using rice grown in Kochi Prefecture, mainly from the local Shimanto Town, continuing sake brewing rooted in the region.
