Misago Shuzo, established during the Keio era (1865-1868), is a historic brewery in Hodatsushimizu Town with over 150 years of heritage. Its most defining characteristic is its reverence for the pure spring waters of the sacred Mt. Hodatsu and its deep commitment to 'long-term aged sake,' letting time perfect the craft.
By using the soft underflow water of Mt. Hodatsu—the highest peak on the Noto Peninsula—and inheriting traditional techniques, they slowly draw out the full umami of the rice. In an exceptionally meticulous process, they age their flagship Junmai Daiginjo for three years before release. Their signature brand, 'Toki no Sato,' is named after the Japanese Crested Ibis (Toki) that once soared over Noto's skies, reflecting the brewery's firm conviction in preserving the region's rich environment. The mellow depth created by aging and the soft mouthfeel granted by Mt. Hodatsu's water offer a special flavor that evokes the quiet flow of Noto's time and deep affection.
