Fuse Shuzoten, founded in 1876, is the only remaining brewery in Nanao City, Ishikawa, carrying forward the region's brewing heritage. The brewery's most distinctive feature is its status as a highly rare specialist in 'Koshu' (aged sake).
Except for seasonal fresh releases, their entire lineup consists of sakes aged for 3, 5, 10, and sometimes even over 20 years. By allowing the sake to rest patiently in tanks, it develops a mysterious amber radiance and a deep, mellow aroma reminiscent of dried fruits and spices—qualities not found in young sake. The labels feature powerful calligraphy by the current head's brother, the Japanese painter Kinji Fuse, giving the bottles an artistic presence. Truly an 'artwork of time,' this brewery continues to push the boundaries of sake by exploring the profound depths of the aging process.
