Noguchi Shuzoten is a historic sake brewery in Fuchu, established in 1860 during the late Edo period. The Noguchi family served as officials (Jinin) of the prestigious Okunitama Shrine and began brewing sake upon receiving an order to produce sacred Omiki for the shrine. Their flagship brand, 'Kokufuzuru' (or Kozuru), was named with the wish to 'create a sake as graceful as a crane in the land of the provincial capital (Kokufu),' reflecting Fuchu's history as the ancient capital of Musashi Province.
As the area around the brewery near Fuchu Station became urbanized, in-house brewing was suspended in 1985 in favor of contract brewing. However, after nearly 40 years, the brewery has successfully revived its own production on-site. The reborn brewery operates under the concept of 'Musashi-no-Kuni Terroir,' utilizing its own well water and locally sourced ingredients. Through collaboration with the Tokyo University of Agriculture and Technology, they use locally developed rice like 'Sakura Fukuhime.' The sake is acclaimed for its elegant 'Rei-Umakuchi' profile, characterized by refined umami and a remarkably crisp finish. Carrying forward its sacred heritage, the brewery continues to represent the culture and history of Fuchu for a new era.
