Kubota Shuzo is a brewery located along the Tone Canal in Noda City, Chiba Prefecture. The founder, Sokichi, originally from Shiga Prefecture, moved to Noda City in search of abundant high-quality water and the convenience of water transport by canal, and moved the brewery to the current location along the canal following the completion of the Tone Canal.
Noda City is surrounded by the Tone River, Edogawa River, and Tone Canal, and has a history of developing as a soy sauce brewing town utilizing its water transport since ancient times, and is still a brewing town with Kikkoman factories. It fascinates many fans with careful sake brewing that values tradition using locally produced rice, and its hon-mirin (sweet cooking rice wine) made by traditional methods is also highly evaluated by chefs.
