Wakashimizu Shuzo, founded in 1751, is a historic brewery with over 260 years of tradition in Hirata Village, Ishikawa District, located at an altitude of 500 meters in the Abukuma Mountains.
Leveraging the extreme cold of winter, where temperatures often drop below -10°C, they practice the meticulous low-temperature fermentation possible only in such a climate. They use pure, abundant soft spring water found in the forest by the first generation owner for every step of production.
Using locally grown "Yume-no-Ka" and "Chiyoshiki" rice, they brew with a "one bottle, one soul" handcrafted approach unique to small breweries. The resulting sake features a soft mouthfeel and transparency characteristic of soft-water brewing, delivering a dignified and fresh drop nurtured by Fukushima's harsh winter.
