Kawachu Shuzo, established in 1765 (Meiwa 2), is a historic brewery in the Wakino district of Nagaoka, Niigata, with over 250 years of heritage. Situated at the foot of the Nishiyama Mountains, it uses pure subsoil water from the 'Jange' ('Snake Escape') Waterfall behind the brewery for its production. While it has long nurtured the traditional local brand 'Fukusen,' in 2000, the 9th-generation owner and master brewer created the innovative brand 'Soutenbou,' pursuing the quintessential Echigo 'tanrei umakuchi' style.
