Kanzawagawa Shuzo-jo was founded in 1912. It is a highly capable brewery located in Yui, Shimizu-ku, Shizuoka City, a town that once flourished as a post station on the Tokaido road. Its history began when the founder sought high-quality water ideal for his vision of brewing and chose this site along the Kanzawa River.
The most prominent feature is the use of extremely soft water from the Kanzawa River for brewing. Containing very little iron or manganese, this water imparts a light, round, and smooth mouthfeel to the sake. Furthermore, the skills of the Nanbu Toji (master brewer), who knows Shizuoka's climate inside out, create a sake quality characterized by a refreshing, elegant aroma and a perfect harmony of the five flavors (sweet, spicy, bitter, astringent, and acidic).
In the historical post town of Yui, their stance of sincerely pursuing 'clean sake' is highly regarded by foodies as well as local enthusiasts. While valuing tradition, it is a supreme brewery representing Shizuoka that stays close to the hearts of its drinkers.
