Yamagata Honten is a historic sake brewery located in Kume, Shunan City, founded in 1875 (Meiji 8). It started when the first Yosuke Yamagata began sake production as a new family business, and since then, they have continued sake brewing sticking to products from Yamaguchi Prefecture for over 140 years.
Characterized by a soft and refreshing, sharp taste partly because the well water springing in the brewery is slightly soft water. They use clear natural water slowly filtered through the strata of the majestic mountains of the Chugoku Mountains for brewing water, and put their heart into sake brewing using ingredients carefully improved by farmers in Yamaguchi Prefecture such as rice, water, potatoes, and plums.
Developing brands reflecting the history and culture of Yamaguchi such as 'Mouri Kou' and 'Shouin', they have cultivated long-selling brands loved in the region for a long time. They also accept commissioned brewing, contributing to the development of sake culture in Yamaguchi Prefecture by supporting the production of other breweries.
