Chigonoiwa Sake Brewery was founded in 1909 (Meiji 42) in Toki City, Gifu Prefecture, a town of ceramics. It used to be familiarly known by the trade name "Owariya." Its greatest feature is the ultra-soft water with a hardness of only 7, which springs from 45m underground as underground water from Mt. Ontake. The fusion of this rare brewing water and the skills of skilled Echigo master brewers creates the sake "Chigonoiwa" with a surprisingly smooth and gentle mouthfeel.
