Founded in 1875 in Noshiro, Akita, Kikusui Shuzo was a historic brewery long cherished by locals for its sake, originally known as "Kisaburo's Sake."
Their most distinctive feature was the use of a decommissioned railway tunnel (built in 1900) on the old Ou Main Line as a storage cellar. This brick-lined natural refrigerator, designated as a National Registered Tangible Cultural Property, maintained a constant 12°C without electricity, allowing many fine sakes to age in serene silence.
Although its history came to a close in 2024, the brewery's unique aging culture using railway heritage and its passion for Noshiro's terroir remain vividly engraved in the memories of local sake enthusiasts.
