Fujii Shuzo is a sake brewery with 140 years of tradition located in Notsu Town, Usuki City. Aspiring to be a brewery where "light shines in and water is pure," it practices sake-making in the spirit of "wajo ryoshu" (harmonious brewing makes good sake).
It boasts one of the highest gold medal win rates in Oita Prefecture at the National New Sake Competition, with particularly high acclaim for its daiginjo quality.
Using time-honored traditional techniques such as fukurozuri (bag-hanging) drip extraction, the brewery also crafts rare sake through meticulous, labor-intensive brewing.
