They have revived the phantom sake rice "Kairyo Hattan Nagare," whose cultivation had ceased locally, and are brewing sake taking advantage of its characteristics. Currently, Rika Asano, one of the few female chief brewers (Toji) in Shimane Prefecture, serves as the production manager. She continues to brew sake with highly fragrant and gentle taste, fusing delicate sensibility unique to women and traditional techniques.
