Shinkame Shuzo, founded in 1848 in Hasuda City, Saitama Prefecture, is a pioneering brewery that brought a revolution to the history of sake. Its name derives from the legend of the "Turtle, Messenger of God" said to have lived in Tenjin Pond behind the brewery, embodying the determination to continue passing down authentic flavor forever like that turtle.
The greatest achievement of Shinkame Shuzo was realizing the nation's first "total Junmai brewery" (brewing only pure rice sake) in 1987 in post-war brewing. The return to the origin of "brewing with only rice, rice koji, and water without adding any brewer's alcohol," which was unprecedented at the time, became the foundation of today's Junmai sake boom and exerted immense influence on the entire industry.
Furthermore, it is known for its outstanding "maturation" techniques. Instead of releasing new sake as is, it carefully ages it in the brewery for 2 to 3 years, or even over a decade for some, pulling out the inherent strong umami of rice and sublimating it into a mellow, well-rounded sake quality. Its flavor, which demonstrates its true value especially when warmed, brings a deep sense of fulfillment that permeates the whole body.
