Kubiki Shuzo

Kubiki Shuzo is a brewery located in Kakizaki-ku, Joetsu City, Niigata, that values regional terroir and food culture. Kakizaki is a historical land once called 'Kubiki' and is also known as the 'Home of toji' (master brewers) that has produced many Echigo toji.
Placing 'sake that stays close to dishes and enriches the dining table' at the center of brewing, they actively use locally produced ingredients and pure water from Kakizaki. They are working on brewing that expresses the unique terroir of this land by bringing out the natural blessings of Kakizaki to the maximum.
They develop various brands such as the flagship 'Kubiki' and 'Echigo Toji no Sato' with respect for tradition. Its flavor, where a firm umami can be felt within the light taste, pairs extremely well with local regional cuisine and is a trusted brand that continues to walk with the lives of local people.
