Nihon Izumi Shuzo is a brewery located in Kano Shimizu-cho, Gifu City, which is rare in Japan for having its brewery underground in a building. Taking advantage of the stable temperature characteristic of underground cellars, it practices four-season brewing (Shiki Jozo). It uses the subsoil water of the clear stream Nagara River for brewing, and due to a strong desire not to let go of this pristine water, it chose the path of continuing sake brewing in the basement of a building. The location, Kano district, is where Gifu Castle stood, where Oda Nobunaga proclaimed "Tenka Fubu" (Unification of the realm by military rule), and Sunomata Ichiyo Castle associated with Toyotomi Hideyoshi is also nearby. Proud of these historical ties, it develops the Sengoku Warlord Series brands such as "Oda Nobunaga," "Nohime," and "Toyotomi Hideyoshi." A brewery embodying Gifu's history and natural features, utilizing the subsoil water of the Nagara River and the stable environment of the underground brewery.
