Hakkai Jozo, located at the foot of the sacred Mt. Hakkai in Minami Uonuma City, Niigata Prefecture, is a world-renowned brewery that brews 'Hakkaisan,' a representative sake of Japan. Since its founding in 1922, with the motto 'Sake brewing is sincerity,' it has continued to pursue high-quality sake brewing equivalent to Daiginjo even in large-scale production by fusing traditional manual techniques with the latest brewing technology.
For the brewing water, it uses extremely high-quality underflow water from Mt. Hakkai, known as 'Raiden-sama no Shimizu' (Spring Water of God Raiden). It is also known for unique initiatives that utilize the environment, such as storage in a 'Yukimuro' (snow cellar) using the natural cold air unique to snow country. This uncompromising attitude toward quality extends diversely not only to refined sake but also to amazake, shochu, beer, and even whisky. Aiming to enrich the entire food culture, it continues to convey the further heights of Japanese sake from Niigata to the world.
