Shimomura Sake Brewery Co., Ltd. is a brewery founded in 1884 (Meiji 17) and located in the mountainous area of Yasutomi-cho, Himeji City.
Yasutomi-cho is surrounded by 90% forests, and is in an environment where clear and abundant water, clear air, and high-quality sake rice "Yamada Nishiki" are luxuriously available.
Protecting the family motto "There is no technique superior to handmade" passed down from generation to generation, it does not perform mechanization and mass production at all, and carefully continues to protect traditional sake brewing by hand.
Currently, it brews only Junmai sake made from rice and rice koji, and insists on pure sake brewing that does not use any additives.
The brewery stands on the approach to Anji Kamo Shrine, and since the name of the well water of this shrine is "Hakueisen", it used to sell the brand "Hakueisen".
In 1983 (Showa 58), it made a living by selling in barrels to major manufacturers in Nada under the brand "Miyanoi", but in 1993 (Heisei 5), it launched a new brand "Okuharima" and switched to a policy of using 100% locally produced Yamada Nishiki and only specific name sake.
