Located in Masuda City, we brew with underground water from the Takatsu River, the clearest stream in Japan. The Takatsu River has been recognized as the top clear stream in Japan and is one of the nation's leading producers of sweetfish.
We aim for a sake that is gentle, flavorful, and a food-pairing sake that one never tires of. We don't strive for flamboyant aromas; instead, we aim for a sake that lets you feel the umami and taste derived from the "rice" raw material. We aim for a sake that can be enjoyed not just cold, but also at room temperature or warmed as a food-pairing sake.
The rice used is primarily "Saka Nishiki" and "Kamunomai" from Shimane Prefecture, all of which are polished in-house. All sake from Kuwabara Sakaba is "all-Junmai sake" without any added brewing alcohol. "Fusouduru" was named after the symbol of longevity, the "crane" (tsuru), with the wish to represent Japan ("Fusou") and take flight like a crane.
