Otsuka Shuzo is a brewery founded in 1886, known as the only sake brewery in Ikeda-cho, Ibi-gun. Currently, centering on the 6th generation Toji (master brewer) Seiichiro Otsuka (Kendo 5th Dan, graduated from Tokyo University of Agriculture, Brewing Department, trained at Gensaka Sake Brewery for 2 years), it practices careful brewing by hand in all processes as a family-run small-scale brewery. The representative brand "Takesuzume" was developed from scratch by the 6th generation master brewer. Using sake rice such as Yamada Nishiki and Gohyakumangoku, it has gained national acclaim as a Junmai sake with a good aroma and good compatibility with cuisine. "Hatsushimo" is a rare Junmai sake brewed by hand in all processes using Gifu Prefecture's specialty rice Hatsushimo (table rice).
