Towa Shuzo, founded in 1717 in Fukuchiyama City, Kyoto, is a brewery with an inspiring story where Jun Imagawa, the brewery's daughter, revived sake brewing as the first female Toji after a 33-year hiatus since the production halt in 1977.
Based on the wish to provide "sake loved by locals and staying close to daily lives," they are working on a new type of sake brewing that fuses the rich climate of Fukuchiyama and a delicate sensibility unique to women.
In cooperation with local farmers, they implement elaborate "small-batch brewing" using Fukuchiyama-grown "Yamada Nishiki" and "Gohyakumangoku." They stick to an honest attitude that spares no effort, such as adopting traditional "Kibune-shibori" (wooden tank pressing).
Centering on their flagship brand "Rokkan" after revival, Towa Shuzo's sake, woven by locally rooted ingredients and passion for the next generation, shines as a new hope for Fukuchiyama.
